Here is the answer to that age-old question of “What should I take to the party?” This mushroom paté is outstanding. Just remember – if you make it to share with anyone, be sure to take the recipe with you. Everyone will want to take the recipe home.
This mushroom recipe blends cream cheese and garlic with finely chopped mushrooms for an amazing dip for crackers, crudités, or spread for small, toasted bread squares. The mushroom taste is defined, but light enough to tempt even those who aren’t usually fond of mushrooms. Because the mushrooms, garlic, and onions are cooked together, the flavors come to the forefront and combine to form a wonderful flavor experience.
As with all patés, this can be chilled in a mold then inverted onto a plate for a beautiful presentation. Line a small bowl or other form with plastic wrap prior to chilling the pate. Chill for at least an hour, then place a serving plate over the top of the bowl, invert it, then remove the plastic wrap. You can sprinkle it with a little chopped parsley or chives prior to serving.
Mushroom Paté Recipe
Ingredients for Mushroom Paté:
- 4 tablespoons butter, divided and softened
- ½ pound fresh mushrooms, finely chopped (equal to three cups)
- 2 cloves garlic, finely chopped
- ¼ cup green onions, finely chopped
- ½ cup chicken broth
- 1 8-ounce cream cheese, softened
- 2 tablespoons chives, finely minced
- ¼ tsp. black pepper
Directions for Making Mushroom Pate:
In a medium skillet over medium-high heat, melt 2 tablespoons of the butter. Add the mushrooms – cook for 2 or 3 minutes, stirring occasionally. Add the chopped garlic and green onions; cook for 1 minute more, again, stir occasionally to insure even cooking and no burning. Add the chicken broth and cook uncovered over high heat about 5 minutes or until all the liquid has evaporated. Remove the skillet from the heat. Let the mixture cool to room temperature – about 15 minutes.
In a medium-sized mixing bowl, beat the cream cheese and remaining 2 tablespoons of butter with an electric mixer. Mix in the mushroom mixture, chives, and pepper. Mix well.
Either place the mixture in a serving bowl (if serving directly from the bowl) or see above regarding molding the pate to invert on a plate prior to serving. Either way, you need to chill the mixture for at least an hour prior to serving. Arrange on a plate with crackers, bread squares or vegetables.
