Susan Nolte and her daughter, Marissa Hanley, researched how they could make a homemade cookie better, by using healthier ingredients and make it easier for you in the kitchen. Let’s get baking! The Triple Chocolate Oatmeal Cookie Mix is a delicious combination of whole grains and a blend of 3 kinds of chocolate chips: semi-sweet; dark; and just a hint of milk chocolate. A satisfying treat that is full of flavor and not too sweet. The only things you need to add are butter or butter substitute of your choice, a large egg, vanilla extract, and parchment paper (to bake them on, not to eat). Once your dough is mixed, use a cookie scoop (looks like a small ice cream scooper) to measure and help the cookie to retain a perfect circular shape. I used a small rubber scraper to flatten the cookies to ½ inch thickness. Don’t over bake! They may look a little raw, but once you take them out of the oven, they will continue to set on the cookie sheet. These cookies are amazing! You know they are healthy by seeing the ingredients, but they don’t taste healthy. They are absolutely to die for! They taste like my grandmother-in-law’s chocolate chip oatmeal cookies – rich, decadent, and you can’t stop eating them. Thumbs up, way up!
The Hearty & Wholesome Oatmeal Cranberry Cookie Mix is filled with whole grains and cinnamon, full of chewy texture and the great, sweet/tart flavor of dried cranberries. Add the same ingredients and prepare like the Triple Chocolate Oatmeal with a little longer baking time. I can see why they nickname this one the breakfast cookie. It tastes like hearty oatmeal with a slight sweetness, cinnamon flavor, and a little tartness from the cranberries. This is a cookie I would pack for a hike for a quick energy boost. Thumbs up!
Finally, for my vegan friends, the May Cookie Company didn’t forget about you. The Rich & Chewy Chocolate Chocolate Chip Cookie Mix is a brownie-like cookie, with dark chocolate chunks, yet lower in fat. This recipe is dairy-free and egg-free. The only things you need to add are canola oil, soymilk, and vanilla extract. I found it amazing how they used flax meal and soy milk to make the binding agent for the dough. Usually, it is an egg, but this method is quite ingenious. You’ll get the same reaction in your kitchen when you make it. I think for a vegan cookie this is great. It has a good chocolate flavor like chocolate biscotti. But as a non-vegan, I really missed the butter and egg flavor that makes a cookie great.
