Freixenet is the largest producer of traditional method sparkling wine, but quality still remains their number one objective. Cava is made with the traditional blend of Macabeo, Parellada and Xarello grapes. Macabeo is also known as Viura in Rioja, this variety contributes medium acidity, notes of wildflowers and powerful almond flavor. Parellada contributes delicacy and aromas of citrus and golden apples. Xarello adds hints of crisp apple, body, acidity and alcohol.
- Freixenet Cordon Negro Brut Cava: (35% Macabeo, 25% Xarello and 40% Parellada) This sparkling is crisp and refreshing with nice acidity an a medium to long dry finish. It shows aromas of lemon, brioche and golden apples. On the palate you enjoy fresh apples, pears and tangerine with a hint of ginger. This wine will pair well with a great variety of food, from a shrimp or chicken salad, fried appetizers, creamy and mild cheeses to a pan fried flounder with saffron rice. - Segura Viudas Brut Reserva Cava: (50% Macabeo, 35% Parellada and 15% Xarello) This elegant sparkling shows a persistent flow of tiny bubbles. I has aromas of green apples, pears, passion fruit and lemon peel with hints of acacia. On the palate this wine feels fresh with great acidity and complex flavors of Granny Smith apples, pears, lemon and star fruit with notes of lemon grass and melon. You can enjoy this sparkling before dinner but it will be a great companion for soft cheeses like Brie, shellfish, white fish, anchovies bruschetta, seafood pasta and chicken with a creamy sauce. - Freixenet Cordon Negro Extra Dry Cava: (35% Macabeo, 25% Xarello and 40% Parellada) This sparkling is clean and fresh, a bit more sweet than the Cordon Negro Brut. It shows aromas of fresh lime, tangerine, peach and hints of yeast. On the palate this wine has a creamy texture with flavors of clementine, peach, fresh baked bread, candied apple and honey. This wine is food friendly, it will be delicious by itself but will pair great with spicy food, lasagna, pizza, fried chicken and creamy desserts like crème brûlée or flan.
