The simplicity and ease of preparation of these cookies is astounding, considering the elegance of the ingredients. Made with olive oil and red wine these crumbly wonders are almost guilt-free as they contain no saturated fat.
Paired with coffee or dessert wine, this Italian favorite makes a perfect addition to any holiday gathering or a special occasion with a loved one.
Red wine cookies recipe
2 1/2 cups all-purpose flour (you can subsitute up to half with whole wheat flour)
1/3 cup sugar
1 1/2 teaspoons baking powder
1/2 cup extra virgin olive oil
1/2 cup red wine (or white wine), any leftover wine will do
extra sugar for rolling the cookies
Preheat oven to 350F.
Combine all dry ingredients and whisk together. Mix olive oil and wine together, then slowly pour into dry ingredients. Mix until all ingredients are incorporated and dough is smooth.
Let the dough rest in the refrigerator for 10 min. In the meantime, sprinkle the extra sugar on a plate in preparation for rolling cookies.
Remove dough from the refrigerator and roll into a log about an inch thick. Cut the log into half inch slices (bigger or smaller depending on the desired size). Roll each piece into a ball and press onto sugar, flattening the cookies a bit.
Bake for 20-25 minutes, until cookies are golden. Let cool. Enjoy with coffee or a glass of wine!
